Keto S'mores Cereal Bars


Snacky snack time. No campfire required. If you enjoy the toasty feels of s'mores then get ready to spoil your appetite (minus the extra carbs). Peanut butter. Chocolate. Totally delish! Plus, this recipe's really loaded with protein too. 


Ingredients

For The Marshmallow 
- 2 Large Egg Whites
- 5 tbsp Unflavored Gelatin
- ¾ cup Powdered Allulose
- ½ tsp Vanilla Extract
- ¼ cup Cold Water
- ¾ cup Boiling Water

For the Bars
- 1.5 cups Marshmallow Mixture, plus a few spoonfuls to top
- 4 tbsp Butter
- 5 pouches Peanut Butter Cereal, or your favorite flavor!
- 5 oz Sugar-Free Milk Chocolate (about 2 bars), chopped, reserving a few pieces to top

Instructions

1- Dissolve the gelatin in ¼ cup cold water and set aside. Begin boiling the ¾ cups water either on the stove or in a microwave-safe container.

2- Meanwhile, in a stand mixer or with a hand mixer, beat the egg whites and slowly pour in the vanilla and powdered allulose. The mixture should be frothy and the whites will begin to thicken.

3- Next, add the boiling water to the hydrated gelatin and stir vigorously, making sure there are no lumps left. 

4- Once the gelatin is completely dissolved, begin whipping the egg whites on high. Then with the mixing running, pour in the gelatin. 

5- Continue to beat the mixture on high until the marshmallow begins the thicken. This should take about 5 minutes. Reserve 1 ½ cup of marshmallow fluff, and cover the rest or spread into a parchment-lined pan for marshmallows!

Make the Bars

1- Line an 8x8 square baking dish with parchment and spray with non-stick cooking oil.

2- Melt the butter either in the microwave or on the stove.  Add the melted butter to the 1 ½ cups of the marshmallow and remove from heat.  

3- Fold in the peanut butter cereal and the chopped chocolate bar and press into a parchment-lined pan. Top with a few spoonfuls of the extra marshmallow and the reserved chocolate and use a kitchen torch or slide the pan under the broiler set to high for 1-2 minutes to melt everything together. *The marshmallow might brown slightly but won’t toast like a normal marshmallow. 

4- Let cool completely before slicing. Keep refrigerated.
