Cookies & Cream Keto Cereal Brownies

Is your mouth already watering or what?! Earlier this week, we launched our newest keto cereal flavor—Cookies & Cream! So, to celebrate, we whipped up a super tasty, low carb dessert that's chewy, rich, and crunchy!

Ingredients

For the Brownie Layer

  • 8 tbsps unsalted Butter
  • 6 oz Sugar Free Milk Chocolate Chips
  • 3 Large Eggs
  • 1 tsp Vanilla Extract
  • ¼ cup Unsweetened Cocoa Powder
  • ¾ cup granulated Erythritol, or sweetener of choice
  • ¼ cup Almond Flour
  • ½ tsp Xanthan Gum

For the Cream Layer

  • 1 8oz package Cream Cheese
  • 1 egg
  • ¼ cup granulated Erythritol or sweetener of choice
  • 1 tsp Vanilla Extract
  • 2 pouches keto Cookies & Cream Cereal
  • 2 tbsp Sugar Free Chocolate Chips
  • 2 tbsp Sugar Free White Chocolate Chips

Instructions

 

  1. Heat oven to 350 degrees and line a square pan with parchment. Melt the butter by microwaving in a glass dish for 30 seconds. Stir in the chocolate chips and set aside.
  2. Use a hand mixer or wire whisk to beat the eggs, vanilla extract, erythritol, and cocoa powder just until smooth. Be careful not to over-beat!
  3. Add the almond flour and xanthan gum and gently stir to combine. Mix the melted butter and chocolate to make sure the chocolate chips are completely melted. Pour the warm chocolate mixture into the egg and flour mixture and beat vigorously until a very thick batter forms. Spread into prepared pan.
  4. For the Cream Layer: Beat the cream cheese, egg, sweetener, and vanilla until smooth. Pour the cream mixture over brownie batter and use a spatula to smooth the top.
  5. Bake for 35-45 minutes, watching for the edges of the brownie to set and the center to be slightly soft. Remove from the oven and top immediately with Keto Cookies & Cream Cereal, Sugar Free Milk Chocolate, and Sugar Free Which Chocolate Chips. You want the chips to melt slightly into the cereal and brownie!
  6. Let cool completely before slicing. Can be stored in the refrigerator for 3-5 days.
